I’m a mother of 3 and a cancer survivor. I’m passionate about all things plant-based and I absolutely love RV adventures. Oh, and did I mention I’m also a proud fur baby mama? When I’m not busy being all those things, I work as a graphic designer and run my own small business.
My Vegan Journey
Just like many of you, I grew up on the SAD (Standard American Diet). However, everything changed for me after my battle with cancer and watching the eye-opening documentary Forks Over Knives (FOK). That’s when I decided to transition to a vegan lifestyle. In 2020, I made the shift to a whole food plant-based (WFPB) diet, and let me tell you, it has been an incredible journey.
Challenges on My WFPB Path
One of the challenges I face as a WFPB eater is finding suitable options when dining out, especially with my blended family. While my husband and son stick to the standard American diet and my daughters are vegetarian, I follow a whole food plant-based vegan diet.
But I didn’t let that deter me! I took matters into my own hands and started reaching out first to local restaurants, and later, anywhere I went. I kindly asked if they could provide oil-free plant-based dishes. The responses I received were both surprising and encouraging. I was amazed to learn that many restaurants were already offering oil-free options or adapting existing dishes to meet my WFPB needs. Some places even had an entire oil-free vegan menu. That warms my heart!
Creating Vegan Unfold
This experience made me realize that the demand for oil-free whole-food options is more common than I originally thought. And that’s why I decided to create Vegan Unfold—a blog dedicated to helping fellow WFPB eaters find suitable places to dine out when traveling, on vacation, or even in their local area. Over the past 18 months, we’ve contacted thousands of restaurants and compiled a comprehensive list of venues that accommodate WFPB eaters. I will be adding new restaurants once or twice a week, so make sure to check back often. Vegan Unfold features vegan, vegetarian, and traditional restaurants, catering to families like ours with different dietary preferences.
